Ingredients:

  • 1 cup instant oats
  • 0.5 cup natural smooth almond butter or peanut butter
  • 0.33333334 cup maple syrup or raw honey
  • 2 teaspoons cinnamon
  • 2 tablespoons wheat germ
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1 teaspoon pure vanilla extract or the insides of 1 vanilla bean
  • 0.5 cup dark chocolate chips
  • 0.25 cup unsweetened flaked coconut

Instructions:

  1. In a large bowl, combine all the ingredients – instant oats, almond butter, maple syrup (or raw honey), cinnamon, wheat germ, chia seeds, ground flaxseed, vanilla extract (or vanilla bean insides), dark chocolate chips, and unsweetened flaked coconut.
  2. Mix the ingredients until thoroughly incorporated.
  3. If using a vanilla bean, cut it open and scrape the insides into the bowl.
  4. Chill the mixture in the refrigerator for 15 minutes to allow it to firm up.
  5. Alternatively, you can roll the mixture into 1-inch balls immediately using cold wet hands.
  6. Store the Raw Energy Balls in an airtight container in the refrigerator.
