Ingredients:

  • 6 pounds Napa cabbage, shredded into 2-inch strips
  • 3 tablespoons salt
  • 2 cups sliced scallions
  • 3 minced garlic cloves
  • 1 tablespoon minced ginger root or 2 teaspoons ginger powder
  • 4 tablespoons dried ground chili pepper
  • 2 tablespoons sugar

Instructions:

  1. In a large bowl, mix the shredded cabbage with half of the salt. Allow it to stand for 30 minutes to draw out excess moisture. Then, wash the cabbage thoroughly and drain well.
  2. In the same bowl, combine the scallions, minced garlic, minced ginger, dried ground chili pepper, and the remaining salt. Mix well.
  3. Add the cabbage to the bowl and toss until all the ingredients are evenly distributed.
  4. Pack the mixture tightly into a crock or glass jar, pressing down firmly to remove any air pockets.
  5. Cover the container with a lid or plastic wrap and let it sit at room temperature for three to four days. This will allow the kimchi to ferment and develop its signature flavor.
  6. After the fermentation period, transfer the kimchi to the refrigerator for storage. It can be consumed immediately or left to ferment further for a more intense flavor. Kimchi can be stored in the refrigerator for several weeks.
