Ingredients:

  • 2 cups sliced almonds
  • 0.25 cup stevia, divided
  • 0.5 teaspoon ground cinnamon
  • 5 tablespoons salted butter, melted
  • 32 ounces cream cheese
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 16 ounces sour cream

Instructions:

  1. Preheat the oven to 300°F (150°C).
  2. In a food processor, combine the sliced almonds, 3 teaspoons of stevia, and ground cinnamon. Pulse until the almonds are finely ground.
  3. In a medium bowl, mix the melted butter with the ground almond mixture until well combined. Press the crust into a 9-inch springform pan, creating an even layer. Set aside.
  4. In a large mixing bowl, beat the cream cheese with a hand mixer on low speed for about 2 minutes, or until fluffy.
  5. Using the hand mixer, gradually mix in the remaining stevia, adding one egg at a time.
  6. Once all three eggs are mixed in, add the vanilla extract and sour cream. Mix on low speed until fully combined.
  7. Pour the cheesecake mixture over the crust in the springform pan.
  8. Bake in the preheated oven for 1 hour, or until the top is golden brown. It may take an additional 30 minutes of baking time.
  9. Turn off the oven and leave the cheesecake inside with the door open for one hour to let it set.
  10. Cover the cheesecake with plastic wrap and refrigerate for 24 hours before serving.
  11. Serve chilled or at room temperature.
