Ingredients:
- 0.5 cup fish sauce
- 0.5 cup lime juice
- 0.25 cup sugar
- 4 cloves garlic, minced
- 1 chopped jalapeno

- 1.25 pounds boneless, skinless chicken breasts
- 0.25 cup hot tap water
- 0.25 cup rice vinegar
- 0.5 teaspoon salt
- 0.25 teaspoon crushed red pepper
- 2 carrots, sliced thin on the bias
- 2 daikon radishes, sliced thin on the bias
- 6 soft sub rolls
- 0.33333334 cup mayonnaise
- 0.5 cucumber, sliced thin
- 1 cup cilantro leaves (or mint)
- 1 sliced jalapeno for extra heat
Instructions:
- Mix the fish sauce, lime juice, sugar, minced garlic, chopped jalapeno, and salt in a baking dish.
- Add the chicken breasts to the dish, cover, and refrigerate for at least 1 hour. The longer it marinates, the better the flavor!
- In a medium bowl, stir the hot tap water and sugar until the sugar dissolves.
- Add the rice vinegar, salt, crushed red pepper, sliced carrots, and radishes. Cover and refrigerate for at least 30 minutes to pickle the veggies.
- Preheat the grill to medium heat. Grill the marinated chicken breasts for about 5 minutes per side, or until cooked through.
- Remove the chicken from the grill and cover it with foil. Let it rest for 5 minutes before slicing it into thin pieces.
- Open the sub rolls and grill the insides for about 1-3 minutes, until toasted.
- Drain the pickled veggies.
- Spread mayonnaise on the inside of the sub rolls.
- Layer the sliced cucumbers, grilled chicken, pickled veggies, cilantro leaves (or mint), and sliced jalapenos in the rolls.
