Grilled Chicken Banh Mi

Ingredients:

  • 0.5 cup fish sauce
  • 0.5 cup lime juice
  • 0.25 cup sugar
  • 4 cloves garlic, minced
  • 1 chopped jalapeno
  • 1.5 teaspoons salt
  • 1.25 pounds boneless, skinless chicken breasts
  • 0.25 cup hot tap water
  • 0.25 cup rice vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon crushed red pepper
  • 2 carrots, sliced thin on the bias
  • 2 daikon radishes, sliced thin on the bias
  • 6 soft sub rolls
  • 0.33333334 cup mayonnaise
  • 0.5 cucumber, sliced thin
  • 1 cup cilantro leaves (or mint)
  • 1 sliced jalapeno for extra heat

Instructions:

  1. Mix the fish sauce, lime juice, sugar, minced garlic, chopped jalapeno, and salt in a baking dish.
  2. Add the chicken breasts to the dish, cover, and refrigerate for at least 1 hour. The longer it marinates, the better the flavor!
  3. In a medium bowl, stir the hot tap water and sugar until the sugar dissolves.
  4. Add the rice vinegar, salt, crushed red pepper, sliced carrots, and radishes. Cover and refrigerate for at least 30 minutes to pickle the veggies.
  5. Preheat the grill to medium heat. Grill the marinated chicken breasts for about 5 minutes per side, or until cooked through.
  6. Remove the chicken from the grill and cover it with foil. Let it rest for 5 minutes before slicing it into thin pieces.
  7. Open the sub rolls and grill the insides for about 1-3 minutes, until toasted.
  8. Drain the pickled veggies.
  9. Spread mayonnaise on the inside of the sub rolls.
  10. Layer the sliced cucumbers, grilled chicken, pickled veggies, cilantro leaves (or mint), and sliced jalapenos in the rolls.
  11. Serve immediately and enjoy!
