Egyptian Fatteh – A Delicious Rice and Meat Dish with Crispy Bread

Ingredients:

  • 1 lb Beef
  • 1 Onion
  • 1 Chicken Stock Cube
  • 2 Tomatoes
  • 4 Garlic Cloves
  • 1 tbsp Tomato Puree
  • 2 cups Rice
  • 1/4 cup Noodles
  • 1/4 cup Butter
  • 2 cups Olive Oil
  • 1 Pita Bread
  • 1 tbsp Cumin
  • 3 tbsp White Wine Vinegar
  • To taste: Salt and Pepper

Instructions:

  1. Prepare the bread for the bottom of the dish:
  • Take a pita bread and rip it into bite-sized pieces.
  • In a frying pan, melt about a 1/4 stick of butter and add the bread pieces.
  • Fry the bread until golden brown and crisp.
  • Transfer the fried bread pieces to a glass baking dish, preferably square-shaped. Set aside.
  1. Prepare the meat:
  • In a pot, melt some butter and stir-fry the beef until browned.
  • Add the quartered onion, salt, pepper, chicken stock cube, and enough water to cover the meat.
  • Bring the mixture to a boil, then reduce the heat to simmer.
  • Cover the pot and cook the meat until tender, approximately 2 hours.
  • Once the meat has cooled, remove the chunks and set them aside in a bowl.
  • Reserve the soup from the meat separately.
  1. Prepare the rice:
  • In a pot, melt some butter and add the fideo noodles.
  • Stir the noodles until golden brown.
  • Add two cups of rice and stir until some of the rice turns opaque white.
  • Add 2-1/4 cups of water and salt to taste.
  • Bring the mixture to a boil, then cover and simmer until the rice is tender (approximately 35 minutes).
  • Test the rice tenderness before proceeding.
  1. Assemble the Fatteh:
  • Take some of the soup from the meat and pour it over the bread pieces in the baking dish to saturate them.
  • Add the cooked rice on top of the bread pieces.
  • Slowly spoon the remainder of the soup onto the rice, ensuring it reaches just to the top of the rice.
  • Don’t worry about being exact with the amount of soup.
  1. Prepare the red sauce:
  • In a pan, add a little oil or butter and crushed tomatoes.
  • Stir in tomato paste, salt, pepper, crushed garlic, and cumin.
  • Add approximately 3 tablespoons of vinegar and stir until the sauce thickens slightly.
  • If the sauce is too thick, you can add a bit of water.
  • Spread the red sauce atop the rice, covering it with a wooden spoon.
  1. Fry the meat:
  • In a pan, add a bit of butter or oil and the cooked meat.
  • Stir in tomato paste, crushed garlic, salt, pepper, and cumin.
  • Cook the meat until it turns golden fried.
  1. Serve and enjoy:
  • Spoon the fried meat on top of the rice.
