Ingredients:
- 1 pound beef chuck (stewing beef)
- 4 medium carrots, roughly chopped into bite-size pieces
- 1 large onion, roughly chopped
- 2 pints button mushrooms (about 20 mushrooms), rinsed, stems removed, and cut in half
- 1 cup red wine
- 2 cups beef broth
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.25 teaspoon cayenne pepper
- 1.5 tablespoons all-purpose flour
- 2 tablespoons extra virgin olive oil
Instructions:
- Cut your vegetables and set them aside. Place the mushrooms in a separate bowl.
- Cut the beef into bite-size pieces and put them in a bowl. Sprinkle flour over the beef and toss it around to lightly coat it.
- Heat 1 tablespoon of olive oil in a large pot over high heat. Wait for about a minute until the pot is really hot, then add the beef. Cook for about 5 minutes, then turn the meat over and cook for another 3-4 minutes until you get a nice golden brown color. Remove the beef from the pot and set it aside in a bowl. Do not turn off the heat.
- Add another tablespoon of olive oil to the pot and add the onions, carrots, thyme, and rosemary. Cook for about 7 minutes, stirring frequently to prevent the bottom of the pot from burning.
- Put the cooked beef back into the pot and add the red wine. Bring it to a boil, then lower the heat and simmer for 5 minutes.
- Add the bay leaf, cayenne pepper, and beef broth to the pot. Bring it to a boil, then lower the heat, cover, and simmer for 20 minutes.
- Finally, add the mushrooms to the pot and simmer for an additional 30 minutes.
- Remove the bay leaf, season with salt and pepper to taste, and serve.
