Easy Beef Bourguignon

Ingredients:

  • 1 pound beef chuck (stewing beef)
  • 4 medium carrots, roughly chopped into bite-size pieces
  • 1 large onion, roughly chopped
  • 2 pints button mushrooms (about 20 mushrooms), rinsed, stems removed, and cut in half
  • 1 cup red wine
  • 2 cups beef broth
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 0.25 teaspoon cayenne pepper
  • 1.5 tablespoons all-purpose flour
  • 2 tablespoons extra virgin olive oil

Instructions:

  1. Cut your vegetables and set them aside. Place the mushrooms in a separate bowl.
  2. Cut the beef into bite-size pieces and put them in a bowl. Sprinkle flour over the beef and toss it around to lightly coat it.
  3. Heat 1 tablespoon of olive oil in a large pot over high heat. Wait for about a minute until the pot is really hot, then add the beef. Cook for about 5 minutes, then turn the meat over and cook for another 3-4 minutes until you get a nice golden brown color. Remove the beef from the pot and set it aside in a bowl. Do not turn off the heat.
  4. Add another tablespoon of olive oil to the pot and add the onions, carrots, thyme, and rosemary. Cook for about 7 minutes, stirring frequently to prevent the bottom of the pot from burning.
  5. Put the cooked beef back into the pot and add the red wine. Bring it to a boil, then lower the heat and simmer for 5 minutes.
  6. Add the bay leaf, cayenne pepper, and beef broth to the pot. Bring it to a boil, then lower the heat, cover, and simmer for 20 minutes.
  7. Finally, add the mushrooms to the pot and simmer for an additional 30 minutes.
  8. Remove the bay leaf, season with salt and pepper to taste, and serve.
