Citrus Beet Salad

This refreshing Citrus Beet Salad is a delightful combination of flavors and textures. Made with 5 medium beets, grapefruit, sprouts, pumpkin seeds, and goat cheese, this gluten-free and lacto-ovo vegetarian side dish is both nutritious and delicious. The beets are roasted to perfection and then tossed with balsamic vinegar, adding a tangy twist to the dish. The juicy grapefruit and crunchy sprouts provide a burst of freshness, while the pumpkin seeds and goat cheese add a delightful crunch and creamy richness.

Ingredients:

  • 5 medium beets, stems removed
  • 1 Tbsp olive oil
  • 1 Tsp balsamic vinegar
  • 1 grapefruit, peeled
  • 1 cup sprouts
  • 0.25 cup pumpkin seeds
  • 0.25 cup goat cheese, crumbled

Instructions:

  1. Wash the beets and pat them dry.
  2. Place the beets on a sheet of aluminum foil and drizzle them with olive oil. Fold the foil around the beets to create a sealed pouch.
  3. Place the pouch on a cookie sheet and bake until the beets are tender. The cooking time varies depending on the size of the beets. After 30 minutes, pierce the beets with a fork. If they are still hard, return them to the oven and test them every 15 minutes until they are tender.
  4. Remove the beets from the oven and let them cool until they are cool enough to handle. Use your hands to peel away the skin. Slice the beets into bite-size wedges and drizzle them with balsamic vinegar.
  5. Line the bottom of a large bowl with sprouts and top them with the beets and grapefruit.
  6. Sprinkle the salad with pumpkin seeds and crumbled goat cheese.
  7. Serve the Citrus Beet Salad immediately.
