Broccoli & Stilton Soup

Introduction:

Ingredients:

  • 2 tablespoons Rapeseed Oil
  • 1 finely chopped Onion
  • 1 Celery stalk, finely sliced
  • 1 Leek, sliced
  • 1 medium Potato, peeled and diced
  • 1 knob of Butter
  • 1 litre hot Vegetable Stock
  • 1 head of Broccoli, chopped
  • 140g Stilton Cheese, crumbled
  • Freshly ground Black Pepper, to taste

Instructions:

  1. Heat the rapeseed oil in a large saucepan over medium heat. Add the finely chopped onions and cook until soft. If the onions start to catch, add a splash of water to prevent burning.
  2. Add the sliced celery, leek, diced potato, and a knob of butter to the saucepan. Stir until the butter is melted, then cover the pan with a lid. Allow the vegetables to sweat for about 5 minutes. Remove the lid.
  3. Pour in the hot vegetable stock and add any chunky bits of broccoli stalk. Cook for 10-15 minutes or until all the vegetables are soft and tender.
  4. Add the remaining chopped broccoli to the saucepan and cook for an additional 5 minutes.
  5. Carefully transfer the soup mixture to a blender and blitz until smooth. Leave a few lumps for added texture.
  6. Stir in the crumbled Stilton cheese, allowing it to melt into the soup. Season with freshly ground black pepper to taste.
  7. Serve the Broccoli & Stilton Soup hot, garnished with a sprinkle of Stilton cheese and a drizzle of rapeseed oil. Enjoy this comforting and flavorful soup as a delightful starter or a light meal.
