Ingredients:
- 1 kilogram whole chicken or chicken thighs, cut into pieces
- 0.5 tablespoon corn flour mixed with 1 tablespoon water (optional, for thickening)
- 1 clove garlic, crushed
- 500 grams potatoes, peeled and soaked in salted water
- 2.5 tablespoons miso paste or fermented soybean paste
- 2 tablespoons dark soy sauce
- 0.5 teaspoon sugar
- 150 ml water
- Heat enough oil in a wok
- Serve hot with rice
Instructions:
- Heat enough oil in a wok and add the chopped garlic and miso paste. Fry for a while until aromatic.
- Add the chicken pieces to the wok along with 2 tablespoons of dark soy sauce and 1 teaspoon of sugar. Stir-fry the chicken until well-coated with the sauce.
- Lastly, add the cut potatoes to the wok and mix well with the chicken. Add in 250ml of water or enough water to just cover the chicken.
- Bring the water to a boil, cover with a lid, and lower the heat. Simmer for about 20 minutes or until the potatoes soften.
- If the sauce dries up a little, add a little more water.
- Optional: If you prefer a thicker sauce, mix corn flour with water to create a thickening agent. Add it to the wok and stir well.
