Avocado Chicken Parmigiana

Ingredients:

  • 0.5 pound (220 grams) Chicken breast fillet, halved lengthways
  • 0.25 cup (30 grams) All-purpose flour
  • 1 Egg, lightly beaten
  • 1.75 cup (100 grams) Dried breadcrumbs
  • 8 servings Olive oil
  • 4 tablespoons Tomato pasta sauce
  • 0.5 Avocado, sliced
  • 2 tablespoons Parmesan cheese
  • 1 leaves Salad to serve

Instructions:

  1. Preheat the oven to 200C/400F fan-forced.
  2. Place the chicken between 2 sheets of plastic wrap and pound it to 1/4-inch thickness using a rolling pin.
  3. Coat the chicken first in flour, shaking off any excess, then dip it in the beaten egg, and finally coat it well with breadcrumbs.
  4. Place the coated chicken on a baking tray. Repeat the process with the remaining chicken, flour, egg mixture, and breadcrumbs.
  5. Spray the chicken with olive oil.
  6. Bake the chicken for 5 minutes.
  7. Remove the chicken from the oven and top each piece with two tablespoons of tomato pasta sauce. Arrange the avocado slices over the sauce and sprinkle with Parmesan cheese.
  8. Return the chicken to the oven and bake for an additional 5 to 7 minutes, or until golden and the chicken is cooked through.
  9. Serve the Avocado Chicken Parmigiana with a side salad.
