Ingredients:

  • 1 kilogram whole chicken or chicken thighs, cut into pieces
  • 0.5 tablespoon corn flour mixed with 1 tablespoon water (optional, for thickening)
  • 1 clove garlic, crushed
  • 500 grams potatoes, peeled and soaked in salted water
  • 2.5 tablespoons miso paste or fermented soybean paste
  • 2 tablespoons dark soy sauce
  • 0.5 teaspoon sugar
  • 150 ml water
  • Heat enough oil in a wok
  • Serve hot with rice

Instructions:

  1. Heat enough oil in a wok and add the chopped garlic and miso paste. Fry for a while until aromatic.
  2. Add the chicken pieces to the wok along with 2 tablespoons of dark soy sauce and 1 teaspoon of sugar. Stir-fry the chicken until well-coated with the sauce.
  3. Lastly, add the cut potatoes to the wok and mix well with the chicken. Add in 250ml of water or enough water to just cover the chicken.
  4. Bring the water to a boil, cover with a lid, and lower the heat. Simmer for about 20 minutes or until the potatoes soften.
  5. If the sauce dries up a little, add a little more water.
  6. Optional: If you prefer a thicker sauce, mix corn flour with water to create a thickening agent. Add it to the wok and stir well.
