Ingredients:

  • 1 frying chicken, skinless
  • 1 teaspoon dried basil
  • 2 garlic cloves, peeled and minced
  • 1 medium green bell pepper, stemmed and cored
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • Crushed red pepper flakes, to taste
  • 2 tablespoons red wine vinegar
  • 0.5 teaspoon salt

Instructions:

  1. In a 2 1/2-quart pressure frypan or larger pressure cooker, heat oil over high heat.
  2. Add chicken and cook until browned on all sides. Remove from pan and set aside.
  3. Add onion, green bell pepper, and garlic. Cook until softened.
  4. Add red wine vinegar to the pan and stir to loosen any brown bits that may be sticking.
  5. Add chicken, tomatoes, basil, red pepper flakes, salt, and pepper. Close the lid and bring the pressure to the second red ring (15 pounds pressure) over high heat. Adjust the heat to stabilize the pressure at the second red ring. Cook for 10 minutes.
  6. Remove from heat and use the Natural Release Method.
