Ingredients:
- 0.5 pound (220 grams) Chicken breast fillet, halved lengthways
- 0.25 cup (30 grams) All-purpose flour
- 1 Egg, lightly beaten
- 1.75 cup (100 grams) Dried breadcrumbs
- 8 servings Olive oil
- 4 tablespoons Tomato pasta sauce
- 0.5 Avocado, sliced
- 2 tablespoons Parmesan cheese
- 1 leaves Salad to serve
Instructions:
- Preheat the oven to 200C/400F fan-forced.
- Place the chicken between 2 sheets of plastic wrap and pound it to 1/4-inch thickness using a rolling pin.
- Coat the chicken first in flour, shaking off any excess, then dip it in the beaten egg, and finally coat it well with breadcrumbs.
- Place the coated chicken on a baking tray. Repeat the process with the remaining chicken, flour, egg mixture, and breadcrumbs.
- Spray the chicken with olive oil.
- Bake the chicken for 5 minutes.
- Remove the chicken from the oven and top each piece with two tablespoons of tomato pasta sauce. Arrange the avocado slices over the sauce and sprinkle with Parmesan cheese.
- Return the chicken to the oven and bake for an additional 5 to 7 minutes, or until golden and the chicken is cooked through.
