This Express Chicken Curry recipe is a delicious and flavorful dish that can be prepared quickly and easily. Ingredients:
- 600 grams chicken breast, cut into large cubes
- 2 tablespoons curry powder
- 3 medium potatoes, cut into medium cubes
- 4 tablespoons olive oil
- 1 package prepared meat curry paste (available at Asian stores)
- 1 package fried tofu (about 10 pieces), each piece cut into 2
- 1 medium onion, chopped
- 3 cloves garlic, grated
- 2.5 cups water
- 1 cup coconut milk
Instructions:
- Prepare the chicken by rubbing it with 2 tablespoons of curry powder. If possible, use Babba’s brand for better flavor. Let it marinate for about 30 minutes and set it aside in the fridge.
- Heat 2 tablespoons of oil in a pan and fry the potatoes for 30 seconds. Set them aside.
- In the same pan, add the remaining 2 tablespoons of oil and sauté the chicken for 5 minutes over medium heat.
- Add the curry paste and mix it well with the chicken. Then, add the fried potatoes and mix again.
- Cook the mixture for about 5 minutes.
- Add 2 1/2 cups of water followed by the sliced fried tofu. Cover the pan and once the mixture boils, reduce the heat to simmering mode and cook for 30 minutes. Stir occasionally.
- After 30 minutes, add the coconut milk and simmer again for 10 minutes.
- Your Express Chicken Curry is now ready to be served with hot rice and Pappadam (round, thin, crispy Indian crackers).
