Express Chicken Curry

This Express Chicken Curry recipe is a delicious and flavorful dish that can be prepared quickly and easily. Ingredients:

  • 600 grams chicken breast, cut into large cubes
  • 2 tablespoons curry powder
  • 3 medium potatoes, cut into medium cubes
  • 4 tablespoons olive oil
  • 1 package prepared meat curry paste (available at Asian stores)
  • 1 package fried tofu (about 10 pieces), each piece cut into 2
  • 1 medium onion, chopped
  • 3 cloves garlic, grated
  • 2.5 cups water
  • 1 cup coconut milk

Instructions:

  1. Prepare the chicken by rubbing it with 2 tablespoons of curry powder. If possible, use Babba’s brand for better flavor. Let it marinate for about 30 minutes and set it aside in the fridge.
  2. Heat 2 tablespoons of oil in a pan and fry the potatoes for 30 seconds. Set them aside.
  3. In the same pan, add the remaining 2 tablespoons of oil and sauté the chicken for 5 minutes over medium heat.
  4. Add the curry paste and mix it well with the chicken. Then, add the fried potatoes and mix again.
  5. Cook the mixture for about 5 minutes.
  6. Add 2 1/2 cups of water followed by the sliced fried tofu. Cover the pan and once the mixture boils, reduce the heat to simmering mode and cook for 30 minutes. Stir occasionally.
  7. After 30 minutes, add the coconut milk and simmer again for 10 minutes.
  8. Your Express Chicken Curry is now ready to be served with hot rice and Pappadam (round, thin, crispy Indian crackers).
