Ingredients:
- 2 tablespoons Rapeseed Oil
- 1 finely chopped Onion
- 1 Celery stalk, finely sliced
- 1 Leek, sliced
- 1 medium Potato, peeled and diced
- 1 knob of Butter
- 1 litre hot Vegetable Stock
- 1 head of Broccoli, chopped
- 140g Stilton Cheese, crumbled
- Freshly ground Black Pepper, to taste
Instructions:
- Heat the rapeseed oil in a large saucepan over medium heat. Add the finely chopped onions and cook until soft. If the onions start to catch, add a splash of water to prevent burning.
- Add the sliced celery, leek, diced potato, and a knob of butter to the saucepan. Stir until the butter is melted, then cover the pan with a lid. Allow the vegetables to sweat for about 5 minutes. Remove the lid.
- Pour in the hot vegetable stock and add any chunky bits of broccoli stalk. Cook for 10-15 minutes or until all the vegetables are soft and tender.
- Add the remaining chopped broccoli to the saucepan and cook for an additional 5 minutes.
- Carefully transfer the soup mixture to a blender and blitz until smooth. Leave a few lumps for added texture.
- Stir in the crumbled Stilton cheese, allowing it to melt into the soup. Season with freshly ground black pepper to taste.
