Alcoholic Bakewell Tart Recipe
This delightful Alcoholic Bakewell Tart is a classic British dessert that combines a buttery pastry base with a sweet raspberry jam filling and a rich almond frangipane topping. The addition of a splash of alcohol adds a unique twist to this traditional treat, making it even more indulgent and flavorful.
Ingredients:
- 175g/6 oz plain flour
- 75g/2.5 oz chilled butter
- 2-3 tbsp cold water
- 1 tbsp raspberry jam
- 125g/4.5 oz butter
- 125g/4.5 oz caster sugar
- 125g/4.5 oz ground almonds
- 1 free-range egg, beaten
- 1/2 tsp almond extract
- 50g/1.75 oz flaked almonds
Instructions:
- To make the pastry, measure the flour into a bowl and rub in the chilled butter with your fingertips until the mixture resembles fine breadcrumbs.
- Add the cold water to the mixture, mixing it in until a soft dough forms.
- Roll out the dough on a lightly floured work surface and use it to line a 20cm/8in flan tin. Place the lined tin in the fridge and let it chill for 30 minutes.
- Preheat the oven to 200C/400F/Gas 6 (180C fan).
- Line the pastry case with foil and fill it with baking beans. Bake blind for about 15 minutes, then remove the beans and foil and cook for an additional five minutes to dry out the base.
- Once the pastry base is ready, spread the base of the flan generously with raspberry jam.
- In a pan, melt the butter and then stir in the sugar until well combined. Add the ground almonds, beaten egg, and almond extract, stirring until the mixture is smooth.
- Pour the almond mixture into the flan tin over the raspberry jam and sprinkle the flaked almonds on top.
- Bake the tart for about 35 minutes, or until the filling is set and the almonds are golden brown. If the almonds start to brown too quickly, loosely cover the tart with foil to prevent burning.
- Once baked, remove the tart from the oven and let it cool before serving. It can be enjoyed warm or at room temperature.
