Ingredients

  • 1 bay leaf
  • 0.5 teaspoon ground caraway
  • 0.5 teaspoon caraway seeds
  • 3 servings chili flakes
  • 3 servings corn flour
  • 0.5 large cucumber or 1 cucumber (cut into medium chunks)
  • 1 large onion (finely chopped)
  • 0.5 bunch of parsley (whole)
  • 8 medium potatoes (quartered)
  • 1 medium red pepper (medium chunks)
  • 3 servings salt to taste
  • 1 tablespoon sweet paprika
  • 3 servings tomato paste to taste

Instructions

  1. In a large pot, heat some olive oil and fry the onions until they become translucent and soft.
  2. Add the paprika and red peppers to the pot and continue cooking for about 5 minutes.
  3. Add the cucumber to the pot and cook for a couple more minutes.
  4. Add the potatoes to the pot and pour in enough water to almost cover them.
  5. Stir in the caraway, bay leaf, tomato paste, parsley, chili flakes, and salt. Adjust the seasoning according to your taste preferences.
  6. Cover the pot and let the mixture simmer until the potatoes are cooked through. Check the water level occasionally to ensure the potatoes are almost completely covered.
  7. Once the potatoes are cooked, you can thicken the gulasch. Dissolve one teaspoon of corn flour in a little bit of water and slowly pour it into the pot. Let it simmer and thicken the sauce. Add more corn flour mixture if needed.
  8. For a thicker consistency, remove a couple of potatoes from the pot, mash them, and return them to the gulasch.
