Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 3 tablespoons tomato paste
  • 32 ounces diced tomatoes, undrained
  • 3 cups chicken broth, divided
  • 1 cup evaporated milk
  • 3 tablespoons flour
  • 1 teaspoon Splenda (or sweetener of your choice)

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat.
  2. Add the diced onion, salt, black pepper, dried basil, and dried thyme. Cook, stirring occasionally, until the onion is tender and golden.
  3. Stir in the tomato paste and diced tomatoes. Simmer for 10 minutes.
  4. In a small bowl, whisk together the flour and 1/4 cup of the chicken broth until well blended. Stir this mixture into the tomato mixture.
  5. Add the remaining chicken broth and simmer for 30 minutes, stirring frequently.
  6. Using an immersion blender, puree the soup until smooth.
  7. Stir in the evaporated milk and Splenda. Heat the soup through.
